信阳毛尖,又称豫毛峰,在1992前信阳茶叶节第一届举办以前,信阳茶叶一直都叫豫毛峰(汤青色绿味浓,干茶白毫满披,毛峰多是其基本特点),信阳本地的原居民应该都知道。“但不是所有信阳毛尖都叫豫毛峰”又是怎么叫出来的呢?

随着信阳茶叶节的历届举办,信阳毛尖早已名声在外,受经济利益的驱使,信阳茶叶外形也越做越小,当然鲜叶采的也越来越小(茶农也会算自己的经济帐,差不多的成本,叶子和芽子市场欢迎程度明显不一样,价格导向收益就区别更大了)。为了一味追求更小,制作工艺也就相应跟进调整,杀青的火候不够,小火杀青,小火长时间慢慢揉焾,原有的炭火烘焙工艺也就成了现在大多采用的电烤箱烘干(当然随着时代的进步,工艺的完善,促进茶叶生产效率的提升是好事,但小编认为凡事应有个度,在这儿不作深入讨论),直接导致了口味越来越淡,劣币驱逐良币的事也就见怪不怪了。所以也就有了“不是所有信阳茶叶都叫信阳毛尖(因为毛尖品类区域的划分较广,淡化了主产地、核心产区的概念,在此也不作展开讨论),也不是所有信阳毛尖都叫豫毛峰”一说了。

小编认为当前的信阳毛尖之所以被大众妖魔化,被叫成“小浑淡”的成因不是信阳本地茶叶本质发生了变化,茶汤浑浊不是因为茶叶品种本身的问题,而是因为采茶等级、制茶的工艺受到了影响。
1、小:因为开采季节越来越早,鲜叶过分强制小,多采摘独芽,机械加工干茶条型盲目追求更小。细嫩幼芽生长的不成熟,茶叶的芬香物质尚未形成,违反了植物的生长规律,属于一种市场误导的病态审美(当然市场是多样化的,消费也是差异性的,但主流市场更多需要政府和知名茶企正确健康引导,不能本末倒置)。

2、浑:因为茶叶独芽小和娇嫩,需要在加式过程中小火,慢加工,揉捻时间过长,会导致茶毫脱落、破碎,开汤自然变得浑浊(商城和固始因为工艺的区别,做的茶叶外形完整度就相对较高,茶汤就比浉河区的茶相对清澈一些)。
3、淡:因为低温炒制,拉烘工艺的调整或改善,茶叶的水分含量较高,与传统炭火拉烘(一个是为提香,一个是为了让茶叶水分含量更低),不利于茶中物质有效释放和香气形成,故汤味清淡,尤其是一些早期的茶,带有一股青草气、青涩味,一些人所谓的“清香、花香”形毛尖不知从何而来。

因此,要纠正信阳毛尖的“小浑淡”之本,就必须实事求是,尊重自然规律,坚持“口感第一、外形第二”的茶叶消费准则,传承信阳茶叶的经典炒制工艺,同时兼顾茶叶外形,正确引领新一代茶叶消费者,打造年轻态新品牌。
总知一杯好的信阳毛尖茶,我认为必须芽不小、汤不浑,味不淡,正本清源才是硬道理。
